Chef and owner Mario has extensive international experience. He began his career in Italy and worked for several years in some of the country's most awarded restaurants. In 1989 he moved to Paris, where he was appointed Italian chef at the Royal Monceau.

Mario's last appointment before moving to Perth was at the Dusit Nikko Hotel in Manila.
