Serves 10.
60 g extra virgin olive oil
2 whole garlic cloves
20 g basil leaves
1.5kg tomatoes, canned, cubed
200 g onions, cubed
Salt, pepper
Gently heat the extra virgin olive oil (never burn it, there
should be no smoke), add garlic, onion and basil leaves and sautee
for 4 -5 minutes on low heat.
Add the tomatoes and salt and pepper to taste.
Cook the sauce for about 15 minutes.
This tomato sauce can also be frozen, so you can enjoy a good
pasta with your home-made sauce anytime. To finish the sauce,
heat it and add some fresh basil or Italian parsley, some fresh
chopped chilli or mushrooms. Explore other combination with seasonal
vegetables or herbs.
